Explanation
Both なん and なに mean 'what'. なん is used before words starting with sounds in the ta/da/na rows, or before counters. In all other cases, なに is used.
Usage
Choose なん when followed by certain initial sounds or counters (e.g., なんさい, なんねん). Use なに in general cases (e.g., なにをしますか).
Formation
なん + [ta/da/na-row word or counter] / なに + [other noun/particle]
